NEWLYWED THANKSGIVING DINNER, Part 2

During the Thanksgiving Holiday,
I usually prepare easy
side dishes. Baking a
turkey and making cornbread stuffing
required a lot of prep time. 
I do not wish to
do like my Mom. She made sweet potato casserole, macaroni and cheese, and other side dishes from scratch. I use shortcuts
so I will not be in the kitchen all day. 

Mrs. Smith frozen pies
taste homemade. Some
grocery store caramel
layer cakes taste good.
Therefore, I buy these
desserts instead of baking 
for Holiday dinners. 

Since canned vegetables are better quality now,
they are my pantry staples.
I enhance their flavor
with butter, broth, real bacon bits, onions,
and garlic.


Here are some easy side dishes that I serve often.

EASY CREAMED CORN


 I- 14-15 OZ CAN  WHOLE KERNEL WHITE  CORN
1- 14-15 OZ CREAMED STYLE WHITE CORN
1 T BUTTER OR MARGARINE
1/2 TSP GROUND BLACK PEPPER

IN MICROWAVE
SAFE DISH ADD BUTTER. MELT BUTTER.
ADD REST OF THE INGREDIENTS TO DISH. STIR AND MIX WELL. MICROWAVE
ON HIGH  3 MINUTES
OR UNTIL CORN HOT
AND BUBBLY.

TIP:
YELLOW WHOLE KERNEL CORN AND YELLOW
CREAM STYLE CORN CAN BE USED

TASTY  GREEN BEANS

1 - 14-15 OZ CANS CUT BLUE LAKE GREEN BEANS
1- 14-15 OZ WHOLE NEW POTATOES
1 -14-15 OZ CAN LOW SODIUM CHICKEN BROTH

DRAIN GREEN BEANS AND POTATOES. PLACE
THEM IN MICROWAVE SAFE DISH. ADD CHICKEN
BROTH.  COVER DISH & STEAM VEGETABLES IN MICROWAVE 3-4 MINUTES OR UNTIL VEGETABLES HOT AND STEAMY.


TIP: ANY CUT GREEN BEANS OK. BLUE
LAKE HAS BEST FLAVOR.

YAM SOUFFLE WITH MARSHMALLOWS


1- 29 OZ CAN YAMS IN HEAVY SYRUP
(BRUCES BEST BRAND)
2 TABLESPOONS MELTED BUTTER
2 TABLESPOONS BROWN SUGAR (  OPTIONAL)
1/2 TEASPOON CINNAMON 
1/4 TEASPOON NUTMEG (OPTIONAL)
I TEASPOON VANILLA EXTRACT
1 EGG
MARSHMALLOWS FOR GARNISH, OPTIONAL

WHIP YAMS WITH  HAND MIXER UNTIL SMOOTH. ADD BUTTER, BROWN SUGAR, EGG, SPICES,  AND VANILLA. MIX WELL. 

PLACE YAMS IN 8-9 INCH GREASED BAKING DISH.
BAKE 20 MINUTES OR UNTIL YAMS ARE FIRM TO 
TOUCH ON EDGES AND IN CENTER. 

TOP WITH MARSHMALLOWS AND BROIL UNTIL MARSHMALLOWS ARE LIGHT BROWN.






EASY GRAVY

2  CUPS TURKEY DRIPPINGS OR 
LOW SODIUM BROTH
1 - 10.5 OZ LOW SODIUM CREAM OF CHICKEN OR CREAM OF CELERY SOUP


POUR DRIPPINGS INTO SAUCE POT,
WHISK IN SOUP. 
HEAT GRAVY ON MEDIUM HEAT. CONTINUE 
WHISKING UNTIL SMOOTH. LET GRAVY COME TO BOIL SO IT WILL THICKEN.  REDUCE HEAT AND 
SIMMER 3 MINUTES.  


TIPS: 

POUR GRAVY IN GRAVY BOAT AND COVER WITH PLASTIC WRAP.
MAKE SURE WRAP TOUCHES TOP
OF  GRAVY.

THIS PREVENTS FILM FROM GETTING ON 
TOP OF GRAVY. 

FOR RICHER GRAVY:

ADD 1 TEASPOON POULTRY SEASONING
AND 1/2 TSP GROUND BLACK PEPPER








EASY DRESSING


1- 6 OZ  CHICKEN OR TURKEY  FLAVOR
 STUFFING MIX
2 SLICES DAY OLD BREAD, CUBED
1 CUP BROTH OR POULTRY DRIPPINGS
 WATER
1 EGG
1 SMALL ONION, CHOPPED
1 CELERY STALK, CHOPPED
2 TABLESPOONS BUTTER

IN BOWL,  ADD STUFFING MIX,
BREAD AND BROTH. 
ADD WATER 
IF NECESSARY SO STUFFING WILL
BE COMPLETELY MOISTENED.
STIR & MIX WELL.
SET ASIDE.


IN SAUCEPAN, SAUTE' BUTTER, ONIONS AND CELERY UNTIL SOFT.  
ADD VEGGIES AND EGG 
TO STUFFING. STIR AND MIX WELL.

ADD STUFFING TO GREASED PAN OR DISH. BAKE 15-20 MINUTES
OR UNTIL FIRM TO TOUCH.
